Flotilla is a small, dynamic restaurant in Newcastle, NSW, offering a relaxed yet refined dining experience that celebrates the joy of eating out.

Our approach is hyper-seasonal, with menus shaped by the rhythms of nature and the exceptional produce of our local growers. We change our menu with the seasons, working with what’s at its peak to keep each visit fresh, thoughtful and connected to place.

Since opening, Flotilla has become known for considered cooking, warm hospitality and a commitment to quality. In 2022, we were honoured to receive our first Sydney Morning Herald Good Food Guide Hat, proudly retaining it in 2023, 2024 and 2025 — recognition that reflects the dedication of our entire team.

For the past seven years, Eduardo Molina has been at the heart of Flotilla, shaping the experience beyond the plate through hospitality, wine and beverage. His approach is simple: create an environment where food, wine, drinks and people come together naturally, and where guests feel genuinely welcome.

But restaurants, like seasons, are always changing.

After almost eight years, we’re looking towards what comes next.

Flotilla 2.0 is coming in 2027.
